Paula Lambert Biography
Paula Lambert founded Dallas' Mozzarella Company in 1982. Today her company has grown from making a few pounds of fresh mozzarella to producing over 30 artisanal cheeses, most of which Paula created and developed. Paula's cheeses have won hundreds of awards and accolades and are known far and wide for their excellence. The cheeses are sold throughout the USA to fine restaurants and stores and directly to cheese lovers!Applauded as one of America's pioneer artisanal cheesemakers, Paula is the author of The Cheese Lover's Cookbook and Guide (2000) and Cheese, Glorious Cheese! (2007).
Paula takes an active role in many professional organizations including the American Cheese Society, Les Dames d'Escoffier, and the Specialty Food Association. Her accolades include: James Beard Foundation's Who's Who of Food and Beverage in America, the Career Achievement Award from Mary Baldwin University, and Awards of Excellence from the IACP as Entrepreneur of the Year and from the Dallas Historical Society for Creative Arts. She received the Lifetime Achievement Award from The American Cheese Society and was chosen as a Grande Dame by Les Dames d'Escoffier International. She is a past-president of the International Association of Culinary Professionals (IACP).
In 2022 Paula and her Mozzarella Company celebrated 40 years of cheesemaking and were named one of the Top 50 Cheesemakers in America by Food & Wine Magazine. Paula's honorable and enthusiastic work ethic, artful style, and generosity of spirit earned her the American Cheese Society Lifetime Achievement Award. And later this month she will named a Grande Dame of Les Dames d'Escoffier International. This award is presented biannually to recognize lifetime contributions, and it is one of the highest honors for a woman within the food, beverage and hospitality industries.
Paula is a philanthropist and has funded many scholarships for travel and study abroad. In 2021 she gave a wonderful bronze sculpture to the Dallas Symphony for their garden.
A frequent radio and television guest, Paula travels extensively, speaking before groups and teaching cooking classes throughout the USA as well as in Italy, France, and Ireland. In 2011 she founded a travel company, Viaggi Deliziosi, and enjoys taking small groups of food lovers to Italy where her travelers stay in a gorgeous villa and explore the culture, cuisine and wine, and the idyllic Tuscan countryside in depth.
