As the holiday season approaches, we at the Mozzarella Company embrace one of our most cherished traditions: crafting exceptional artisanal cheeses by hand. For decades, our dedicated cheesemakers have poured their passion and skill into creating award-winning cheeses, each with a story behind it and a personal favorite.
Carmen, who has been with us for an incredible 36 years, specializes in her beloved Scamorza cheese, smoked over pecan shells. We lovingly call her our "Engineer" because she not only knows every secret recipe by heart but also understands the workings of each piece of equipment in our factory. Her hands have shaped countless cheeses, and her expertise is irreplaceable.
Blanca, part of our team for 25 years, has a special connection to the Rosemary Formaggio, her personal favorite. A true artisan in more ways than one, Blanca crafts all the delicate "cheese clothes" by hand, ensuring each cheese is perfectly made. She even brings the fresh rosemary from home to give her favorite cheese that personal touch.
Then there's Elena, who seems to know everything happening in the factory at any given moment. Whether it's the arrival of fresh produce or the final packaging, Elena has it covered. Her favorite cheese, Caciotta La Cocina, is as vibrant as she is--a delightful blend of kitchen staples, including five types of chiles and spices.
Finally, Judith, our head cheesemaker, has been with us for 20 years. Known for her infectious laughter and vibrant spirit, Judith is the heart of our factory. Her favorite is Monte Festivo, a hard goat cheese rubbed with ancho chile paste, a perfect reflection of her lively personality.
Together, our team works in perfect harmony, often accompanied by lively music, to bring you handmade cheeses filled with tradition, flavor, and love. This Christmas, we invite you to share in our tradition by bringing our award-winning cheeses to your table.
Selection includes:
Smoked Scamorza - Mild buttery flavor with an elastic texture when young, becoming smooth and dense in texture as it ages. (3/4 lb)
Rosemary Formaggio - Mellow and flavorful with a lingering hint of rosemary, and a firm texture (1/2 lb)
Caciotta La Cocina Our Texas version of Monterey Jack , this flavorful cheese becomes smoother and creamier as it ages.(1/2 lb)
Monte Festivo - Dense Goat's Milk cheese coated with mild, smokey flavored ancho chile paste to form a red rind. Aged for two months minimum (1/2 lb)
